PRODUCER NOTES
Domaine Bonnardot is a family-owned vineyard with three generations of experience in soil working and a passion for producing high-quality wine while respecting the terroir and nature. They completed their conversion to organic farming in 2021 after three years of testing, and continue to experiment with sowing, tillage, and the use of herbal teas and essential oils. They also prioritize promoting biodiversity by maintaining dry-stone walls, hedges, woods, and bee hives.
 
TASTING NOTES
A truly exquisite white Burgundy, this Hautes-Cotes de Nuits white is made from a blend of Chardonnay and the rare Pinot Beurot grape varieties, sourced from two young vineyards of eight years of age planted on clay-limestone-silt soils.
On the nose, it exhibits tropical fruit notes from the Pinot Beurot, which then turn into hints of pink grapefruit. On the palate, there is a combination of citrus fruit notes, hawthorn, and lime blossom, and the wine finishes with a salty and fresh taste.
 
FOOD PAIRING
Perfect as an aperitif, paired with fish rillettes, taramasalata, or tapenade. It can also be served as a starter with fish terrine, Lebanese tabbouleh, or grilled fish, such as salmon or trout. Furthermore, it pairs well with Roquefort, Chaource, or matured Comté cheese.

Pinot Beurot is the Burgundian synonym for Pinot Gris and is found rarely in the region.
