ABOUT THE WINE
Founded in 1991 by Peter Weimer, Cascina Ebreo has become one of Piedmont’s most distinctive small wineries, known for producing minimal-intervention wines that reflect both terroir and innovation. With organic farming methods and extremely low sulphur use, the estate focuses on purity and expression. Sinché 2020 is their remarkable take on Sauvignon Blanc — a bold, long-aged white wine that challenges expectations of the variety. Bottled at Reva, with winemaking led by acclaimed oenologist Gian-Luca Colombo, this is a wine that speaks to craftsmanship and character.
TASTING NOTES
Fermented in French oak barriques, including some new barrels, and aged 28 months on the lees with an additional 2 years in bottle, this wine is rich in texture yet retains the bright aromatics of Sauvignon Blanc. Expect notes of lime peel, white peach, elderflower, and subtle hints of brioche and spice. The oak is expertly integrated, providing structure and mouthfeel without overt influence, resulting in a fresh, complex, and age-worthy white.
FOOD PAIRING
An exceptional match for roast chicken with cream sauces, grilled pork tenderloin, or butter-basted white fish. Also pairs well with vegetable risotto or soft cheeses like goat’s curd.
