      Cascina Ebreo is one of Piedmont’s most intriguing and uncompromising wineries, known for crafting minimal-intervention wines of stunning depth and originality.

      Founded in 1991 by Peter Weimer, who left a corporate career in Switzerland to pursue his passion for winemaking, the estate sits in the rolling hills of Barolo country, yet its wines boldly defy convention. With the first vintage released in 1996, Cascina Ebreo has gained a cult following for its expressive, terroir-driven reds and skin-contact whites. Farming is entirely organic, with biodynamic practices and no chemical inputs; in the cellar, only a trace of sulphur dioxide is added. These are honest, age-worthy wines that reflect the soul of the land — complex, wild, and impossible to replicate.       I first tried this wine in Australia paired with fresh seafood. It was so crisp and tasty and memorable that I wanted to purchase it once I returned home. Still as enjoyable, best served ice cold.
