ABOUT THE WINE
The 2022 Meerlust Estate Rubicon is the flagship red from one of Stellenbosch’s most storied estates. A classic, Cabernet-led Bordeaux blend, each variety was harvested and vinified separately before malolactic fermentation in barrel and large foudres. The final blend was assembled for harmony, then matured in French oak for approximately 18 months prior to bottling – a hallmark approach that preserves Rubicon’s poise, depth and ageing potential.
TASTING NOTES
Deep ruby-purple. Aromas of cassis, ripe plum and black cherry unfurl with violet, cedar, graphite and a touch of bay leaf. The palate is medium-to-full-bodied with layered dark fruit, fine-grained tannins and well-judged oak. Energetic freshness drives a long, refined finish with hints of cocoa and savoury spice.
FOOD PAIRING
Superb with roast lamb, rib-eye, beef Wellington or duck; equally at home with mushroom risotto or truffle-infused pasta. Decant for 45–60 minutes and serve at 16–18°C.
