ABOUT THE WINE
Château Climens—the “Lord of Barsac”—is a Premier Cru Classé renowned for a uniquely pure, mineral style of sweet wine from (almost always) 100% Sémillon. In 2016, a long, temperate season and a late, selective onset of noble rot (Botrytis cinerea) yielded a wine of striking finesse and clarity, capturing Barsac’s hallmark lift and chalk-inflected elegance.
TASTING NOTES – 2016 VINTAGE
A shimmering nose of honeyed lemon, white peach and apricot, with layers of candied citrus peel, acacia blossom, saffron and almond. The palate is silken yet taut, balancing luscious botrytised fruit with vibrant acidity and a subtle saline–chalk thread. Precise, long and crystalline rather than opulent—an effortless, graceful Climens with superb definition.
FOOD PAIRING
Magnificent with foie gras, blue cheeses (Roquefort, Stilton), fruit tarts and citrus desserts; also excels with spicy Asian dishes or roast duck finished with an orange or apricot glaze. Serve chilled at 10–12°C.
