ABOUT THE PRODUCER
Pierre Mayeul is the project of three long-time friends with deep Burgundian roots, crafting small-lot wines that spotlight each terroir and climat. Vinified in an historic Ladoix castle and raised in 17th-century Beaune cellars, the wines marry precision with classic élevage. In 2022—a sunny, generous Burgundy vintage—the grapes were gently pressed in a bladder press, the juice settled for 24 hours, then fermented and aged 15 months in French oak (≈30% new) with regular lees-stirring to build texture and complexity.
TASTING NOTES
The 2022 shows ripe yet focused fruit: pear, white peach and baked apple layered with toasted hazelnut, acacia honey and vanilla bean. The palate is silky and layered, with notes of savory cream, wild mushroom and a touch of crushed chalk. Bright acidity and a discreet oak frame lead to a long, saline finish with a hint of toasted pumpkin seed.
FOOD PAIRING
Superb with linguine carbonara, mushroom risotto with truffle, roast poultry in cream, or butternut squash soup finished with crème fraîche and toasted seeds.
