ABOUT THE WINE
For as far back as they can trace their history, the Ellevin family has always been making wine. In 1975, Jean-Pierre Ellevin and his wife began developing the family domaine; in 2003, their son Alexandre joined them. Today, the estate spans 16 hectares, planted exclusively with Chardonnay, and continues to uphold the family's tradition of producing expressive, terroir-driven wines. The 2023 vintage reflects the domaine’s commitment to precision and purity, showcasing the unique character of the region despite the challenges of an unpredictable growing season.
TASTING NOTES
The 2023 vintage offers a vibrant straw-yellow hue. The nose is expressive and fresh, with lifted aromas of citrus peel, green apple, and white flowers, complemented by subtle herbal notes. On the palate, the wine is elegant and creamy, with a fine, buttery texture and a lively mineral backbone. A touch of saline and bright acidity lead into a long, harmonious finish that’s both supple and refreshing.
FOOD PAIRING
Perfect with rich seafood dishes such as seared salmon or monkfish, as well as poultry in cream-based sauces, breaded veal, or soft, creamy cheeses like Roquefort or Brie de Meaux.
