ABOUT THE WINE
From historic sherry house González Byass in Jerez, Néctar Pedro Ximénez NV is crafted from 100% sun-dried Pedro Ximénez grapes, then aged oxidatively in the traditional solera. The result is a richly concentrated, sweet fortified wine that showcases the depth and heritage of Andalucían winemaking. Non-vintage • Sweet • Fortified white • Vegan/Vegetarian.
TASTING NOTES
Inky mahogany with a golden rim. Velvety and luscious on the palate, overflowing with caramel, fig and date, molasses and mocha, and layers of roasted nuts, spice and toffee. Despite its opulence, a gentle lift of acidity keeps the finish long, warming and impeccably balanced.
FOOD PAIRING
A decadent partner for chocolate desserts, fruit cake, mince pies and sticky toffee pudding. Wonderful drizzled over vanilla ice cream or panna cotta; equally at home with a cheese board (blue cheeses especially). Serve lightly chilled.
