ABOUT THE WINE
The Capanna farm, owned by the Cencioni family since 1957, is situated in the Montosoli area, to the north of Montalcino. Founded by Giuseppe Cencioni and his sons, Benito and Franco, it was one of the first farms of the modern period of Brunello. The farm is still family run from both a farming and winemaking viewpoint, with 11 hectares out of 23 devoted to olive groves.
TASTING NOTES
A few months in oak add a little extra weight and complexity to the bright green and red apple flavours of this blanc de noir made from the red Sangiovese grape; a touch of cinnamon and old wood linger on a long, vivid finish.
FOOD PAIRING
This unusual blanc de noirs goes brilliant with lighter pastas with tomato sauces as well as heartier pork dishes such as pork belly or carbonara.
FRIARWOOD SAYS
The grapes are immediately de-stemmed, very gently pressed to minimise extraction of colour, and removed from the skins before fermentation. Fermentation is cool and slow, to extract delicate aromatics, and takes place in stainless steel.
