ABOUT THE WINE
Founded in 1991 by Peter Weimer, who left corporate life in Switzerland to follow his winemaking passion, Cascina Ebreo has become a symbol of authenticity and expression in the heart of Piedmont. The estate released its first vintage in 1996 and has since built a reputation for minimal-intervention wines that reflect both place and personality. The 2021 Cascina Ebreo Rosso is made using organic farming, with biodynamic practices and no additives beyond a minimal amount of sulphur dioxide. It’s a striking and unfiltered natural red wine that showcases the estate’s artisan approach.
TASTING NOTES
This vibrant red reveals aromas of ripe red fruit with a lightly jammy character and a touch of savoury complexity. The palate is fresh and layered with wild cherry, hints of wet earth, and a balancing acidity that leads into soft, dusty tannins. Beautifully structured and drinking far above its price point, this wine also offers ageing potential of up to 10 years — though its charm may make it hard to resist now.
FOOD PAIRING
A perfect companion to charcuterie boards, hard cheeses, and rustic Italian pasta dishes with tomato-based sauces. Also pairs well with mushroom risotto or grilled pork.
