ABOUT THE WINE

Domaine Bonnardot is a family-run estate in Burgundy, with three generations of experience in soil-first viticulture. Committed to organic farming, they completed certification in 2021 after years of innovation with herbal teas, essential oils, sowing and tillage, while also nurturing biodiversity through dry-stone walls, hedgerows, woods, and beehives. The domaine’s environmentally conscious approach is rooted in a deep respect for terroir and a passion for producing wines of purity and character.

TASTING NOTES

This elegant white Burgundy is a blend of Chardonnay and the rare Pinot Beurot (Burgundy's name for Pinot Gris), sourced from two young vineyard parcels planted on clay-limestone-silt soils. The wine opens with exotic tropical fruit and pink grapefruit aromas, especially from the Pinot Beurot. The palate reveals vibrant citrus, lime blossom, and hawthorn, carried by refreshing acidity and finishing with a saline, mineral-laced freshness — a distinctive and expressive Hautes-Côtes de Nuits Blanc.

FOOD PAIRING

Perfect as an apéritif, or paired with fish rillettes, taramasalata, and tapenade. Also delicious with starters like fish terrine, tabbouleh, or grilled salmon or trout. For cheese pairings, try it with Roquefort, Chaource, or matured Comté.
