ABOUT THE WINE

Cuvée Pastorello is crafted to honour the winemaking traditions of Corbières, a wine shaped by purity, balance and the mineral character of the vineyards at Château Pech-Latt.

Behind the cuvée is sommelier Vincent Pastorello. Having built his career alongside some of the world’s most respected names in gastronomy, Vincent served as Head Sommelier at three-Michelin-star Alain Ducasse at The Dorchester, before becoming the hotel’s Wine Director in London.

Now Global Wine & Beverage Manager at Dream International, Vincent brings the same precision and passion to this collaboration with Château Pech-Latt, capturing the soul of southern France in a refined, terroir-led expression.

TASTING NOTES

Ruby-hued with vivid reflections, this blend opens with Grenache's ripe red fruits and a rounded profile. The Carignan brings a welcome lift of freshness and crisp acidity while the Syrah complements with pronounced aromas of black fruits, spices, and a subtle touch of violet.

FOOD PAIRING

Perfect with rosemary lamb, duck, and other Mediterranean herb-led dishes. It’s also brilliant with charcuterie and hard cheeses like Comté or aged Gouda.
