The partnership brings together the award-winning Portuguese Aperitivo - PER SE with the expertise of Gillray's Bar's mixologists, creating four distinctive summer cocktails that capture the essence of Portuguese coastal living right in the heart of London's South Bank.
Located in the iconic County Hall, Gillray's Bar provides the perfect backdrop for this Mediterranean-inspired menu, with sweeping views of the Thames complementing the sunny disposition of these carefully crafted serves.
The Summer Spritz Collection
The collaboration features four signature cocktails, each showcasing PER SE's unique profile in innovative ways:
Sunset Reverie combines PER SE with Campari, Dry Vermouth, and Melon Oleo, creating a sophisticated aperitif that embodies the golden hour magic of Portuguese coastlines.
Sol De Lisboa pays homage to Lisbon's vibrant energy, blending PER SE with Buffalo Trace bourbon, Amaro Montenegro, and Pineapple Oleo for a rich, tropical experience with spiced undertones.
Golden Hour Spritz offers a refreshing take on the classic spritz format, featuring PER SE alongside Grand Marnier, Lillet Blanc, and tonic, delivering zesty elegance with every sip.
The Atlantic Mist provides a lighter option, combining Crodino, Bacardi White, lime, and a signature PER SE foam, creating an aromatic, citrus-forward cocktail perfect for warm summer evenings.

This exclusive menu represents more than just a seasonal offering – it's a celebration of Portuguese culture and craftsmanship, brought to life through the lens of contemporary cocktail artistry. The collaboration showcases how traditional Portuguese botanicals can be reimagined for modern palates whilst respecting their heritage.
