Jacquesson is a true revolutionary in Champagne, and consequently controversial. After decades of making Champagne with the common convention, Jacquesson felt they had to re-think their approach. As they realised it was a convention of homogeneity. They thought, Why aim for average when you can achieve excellence?
So from 2000, they decided to make the best possible blend every year, by blending in some portion of older reserve wines to reflect the spirit of each vintage. They number their assemblies (cuvées) and bottle a specific cuvée each year since the year 2000, rather than making a consistent NV Brut. So their wines are “Never exactly the same, nor completely different.” 
Cuveé No. 745 is based on the 2017 vintage. Made from grapes mainly harvested from Ay, Dizy and Hautvillers, Avize and Oiry. The highly challenging year brought frost, hail and ravaged vineyards. But the little crop that was harvested was of healthy and intensely flavoured—especially the Pinot Noir. Around 30% of the blend was reserved wines from the previous 700 Cuvées completed the blend and it spent 4 years on its lees.

With only less than a gram of sugar, this Champagne hits with its refreshing dryness, which makes it practically a Brut Nature although not labelled as such. Lots of grapefruit, green apple and preserved lemon. The yeasty notes accompany the amazing salty/mineral quality, clearly showing that this is a true “terroir” wine.

Cheesy dishes such as Raclette and with any shellfish such as oysters, and shrimp casserole.

Though not certified, Jacquesson is largely an organic producer and uses a natural, low-intervention winemaking approach.
