ABOUT THE SPIRIT
The Seale family have roots in Barbados extending back to 1650, and have been in the rum business since 1820. In the early 1900s they founded the R. L. Seale distribution company, and over the subsequent decades acquired a number of rum brands (all without their own production facilities, however). In 1995, the company, then led by Sir David Seale, purchased a sugar factory. The buildings dated back to the 1600s, and the site was mostly derelict; after significant investment, however, Foursquare Rum Distillery is now one of the finest and most efficient sugar farms and rum distilleries in the Caribbean. All bottling and ageing is done on-site, using ex-Bourbon barrels sourced for the most part from a certain famous producer in Lynchburg, Tennessee.

TASTING NOTES
Part of the rum spent 10 years in ex-Bourbon casks, and the rest spent 4 years in ex-Bourbon and 6 years in ex-Port casks. Rich red fruit aromas, with struck match, vanilla and wood-spice complexity. The palate is extremely inviting, rich and elegant initially, with savoury black treacle, red fruit and citrus notes, blossoming into a fiery, oak-driven finish. Old wood, black pepper and subtle nutty flavours linger on the finish.

FOOD PAIRING
Superb when enjoyed with a drop of water, which will allow the flavours to fully express themselves and bring the alcoholic strength down to a more manageable level. The rum is sufficiently robust to stand being served on the rocks, and will have a spectacularly positive influence on a cocktail, but it is best treated as a sipping rum, for savoured enjoyment.

FRIARWOOD SAYS
Foursquare (unlike most rum producers) apply many of the terminologies and rules of single-malt whisky to their rums. As a result, the age-statement given is the age of the youngest spirit in the bottle (10 years), and no sugar, sweetener, colouring or flavouring agents are added. The rum is all distilled at the Foursquare Distillery, but is considered a blended rum because it comes from both column (twin-column Coffey) and pot (double-retort) stills.
