ABOUT THE WHISKY
Despite being the largest distillery on Islay, with 6 copper stills producing 3.65million litres annually, Caol Ila releases a relatively tiny amount of whisky annually as single-malt. Located just north of Port Askaig, in a cove looking out over the strait to the Paps of Jura, the distillery draws its water from the Loch Nam Ban. Founded in 1846, the distillery changed hands a few times before coming under the ownership in 1930 of what would eventually become Diageo. It has been continually producing since it was founded, with the exception of 1941-1945 (Second World War) and 1972-1974 (renovation). Most of the malt produced goes into Johnnie Walker blends, but a range of single-malts is also produced. Peated, on average, to 35ppm, the Caol Ila style is relatively genteel, with a salty tang and a herbal/earthy, rather than iodine/seaweed, base. Since 1999 the distillery has also experimented with unpeated special-releases.

TASTING NOTES
Dry smoke, with lemon peel and grass, and a salty, wood-smoke hint, like a smouldering fire on the seashore. Very smooth, with grapefruit and smoked butter on the palate; restrained peat flavours that linger deliciously. A very easily enjoyed peated malt.

FOOD PAIRING
Drink this neat, preferably on its own - the delicate complexity of the whisky would be damaged by food or cigars, and most especially by ice.

FRIARWOOD SAYS
1100 bottles produced, surprisingly rich for a relatively youthful release, full-flavoured and very rewarding to drink.
