ABOUT THE WINE
Château Rieussec was acquired by Domaines Barons de Rothschild (Lafite) in 1984. Traditional Sauternes techniques are used and the harvests are carried out with selective pickings depending on the ripeness of the grapes and the evolution of botrytis cinerea (noble rot). Les Carmes de Rieussec, the Second wine from Château Rieussec, is produced from young vines of the estate.
Enticing notes of candied apricot, vibrant citrus, and juicy white peach emanate from this wine, accompanied by a delicate honeyed nuance. Its palate presents a luscious, full-bodied texture with a perfectly balanced, vivacious finish.
This versatile wine pairs beautifully with unique creations like apricot-glazed goat cheese crostini, orange blossom panna cotta, and lavender-infused crème brûlée. Savoury selections such as blue cheese-stuffed figs, duck rillettes with pear chutney, or an aromatic Moroccan tagine complement it splendidly. For adventurous options, consider sushi with mango or a mild Indian curry with cashews and raisins.
Demonstrating the remarkable flexibility of Sauternes wines, this selection excels in enhancing a wide array of innovative and delightful dishes.
