NV Drappier, Rosé de Saignée

A champion of expressive Champagne and sustainability, Drappier’s roots also run deep in history, as their “pride and joy” cellars date to the 12th Century, where it was used by Cistercian monks. Based in the Pinot Noir central, Cote des Bar, they naturally focus on the red grape, which now “runs in their veins” with vineyards planted over 2,000 years ago by Gallo-Romans. With the same lime soil composition, identical to that found in Chablis Grand Cru vineyards, Drappier’s bedrock of quality lies on its exceptional terroir. They have embraced a completely sustainable way of wine growing and making by using no herbicides or insecticides and working the soil manually with horses, all to help express their impeccable terroir without masking. None of their wines is filtered or fined using any animal products. They take a further step and use some of the smallest amounts of sulphur in Champagne because the expression is paramount in their philosophy…

Most rosé Champagne is made by mixing white and red wine, whereas Rosé Saignée is a method where only red grape juice is macerated for greater concentration of flavour, clearly evident in this wine.
