Succeeding his parents in 1975, Jean Pierre Ellevin now tends this 12 ha family estate, village of Chichée, 4 km from Chablis. Pursuing his craft for passion rather than profit, Jean Pierre takes great pride in his art. The grapes are the product of integrated agriculture, using minimal chemical treatments and maintaining harmony with nature. Vinification is performed in the traditional manner, lasting between 10 and 12 months; the process being closely controlled throughout.
