Regular price £130.00 Save £-130.00ABOUT THE SPIRIT
The Seale family have roots in Barbados extending back to 1650, and have been in the rum business since 1820. In 1995, the company, then led by Sir David Seale, purchased a sugar factory. The buildings dated back to the 1600s, and the site was mostly derelict; after significant investment, however, Foursquare Rum Distillery is now one of the finest and most efficient sugar farms and rum distilleries in the Caribbean. All bottling and ageing is done on-site, using ex-Bourbon barrels sourced for the most part from a certain famous producer in Lynchburg, Tennessee. Foursquare Isonomy is the twentieth release in the Exceptional Cask Selection series and is a 17-year-old blend of heavy and light rums matured entirely in ex-Bourbon Cask (of American White Oak) at Foursquare itself. Isonomy has not been chill-filtered and so some cloudiness may occur, in addition no sweeteners, flavourings or colouring have been added so expect the absolute epitome of authentic, well-matured rum.
TASTING NOTES
On the nose coconut (both dried and fresh), vanilla, ripe peach, pineapple and mango all burst forth followed by green banana and gentler notes of Seville orange, sultana and a hint of crisp mint. The palate is a sweet rush of toffee, maple syrup and milk chocolate followed by rich dates and raisins, walnuts and a subtle touch of Seville orange and fresh young pineapple. The finish is long-lasting with hints of tannic green tea and oak, toasty, smoky and with a kiss of cloves,
